I decided to try out this deliousness I copied from my favourite cooking blog,"What's Cooking Italian Style" http://pegasuslegend-whatscookin.blogspot.com/ . It looked so good and the recipe is so easy I had to try it out. This is a fantastic cake (loaf) for Christmas time. You can bake it and give it as a gift, or serve it during the holidays. It's so Chritmasy! While it was baking, there was the smell of Christmas in the air all over the house. I love it!

The dates and nuts and chocolatecombination, plus the coffee from the Kahlua and orange flavour is just too much! |
1 cup
chopped, pitted dates
1/2 cup Kahlua ( I didn't have Kahlua, but used coffee liqueur from Costa Rica that was just as good)
(Combine the Kahlua and dates and let seep into the dates for around two hours. (I love to do that overnight!)
2/3 cup firmly packed brown sugar
2 tablespoons sweet butter, softened
1 extra large egg
2 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon orange rind
2/3 cup chopped walnuts or pecans (I used almonds, but if you have pecans or walnuts is better)
1 cup dark chocolate chunks or chips
In a medium size bowl measure sugar, butter, and blend with egg together. Pour in the Kahlua and dates. Add the cinnamon and orange rind, flour, baking soda, and salt. Stir in the pecans and dark chocolate chunks.
Put batter in butter greased loaf pans and flour.
Bake until middle is clean when tested with a toothpick
