Christmas Turkey Stuffing



A few people were asking me to post the American Christmas Turkey Stuffing recipe for those non american who love  the stuffing they make. I love the brazilian style farofa we make for Christmas, with nuts and dried fruits and all, but there's nothing like american stuffing. So here you go. This is the was my daughter Flor makes it.


Christmas Turkey Stuffing

Make a concentrated stock with the turkey neck, onions,carrots, celery, leaks, pepper corns, sage, Whole head of garlic. Saute everything, Add cognac and pour water. Boil and simmer for about two hours. Add salt, get rid of the scum on top as it forms.It should have enough salt.
Cut bread into cubes and put in the oven until toast. Set aside.
Fry either sausages or bacon,  add onions, garlic and celery, butter, (good amount) . Set aside.
Cook castanhas portuguesas the day before. Peel them. Or add broken walnuts. Mix it with the fried bacon. Add prunes.
Mix it all with the bread and sprinkle stock, bake it for 30 minutes in a buttered tray, covered with aluminum foil. Take off foil and let it get crispy for another 10 to 15 minutes.
