10 to 12 servings
Filling:
- 5 to 6 each apples and pears or 4 apples, 4 pears and 4 plums or peaches (Ps: I just used apples and peaches and it came out really nice)
- 2 cups (500 ml) frozen or fresh cranberries (optional) (Ps: I didn’t use it)
- ¾ cup (175 ml) packed brown sugar
- ½ cup (125 ml) all-purpose flour
- 1 tsp (5ml) cinnamon powder
- ½ tsp (2ml) each ginger and nutmeg powder or 2 tsp (10 ml) five-spice powder
Topping:
- 1 ½ cups (375 ml) all-purpose flour
- 1 tsp (5 ml) baking powder
- ½ tsp (2 ml) each cinnamon and salt
- 1 cup (250 ml) unsalted butter, at room temperature
- 2/3 cup (150 ml) granulated sugar
- 2 eggs
- 2 tsp (10 ml) vanilla
- 1 cup (250 ml) chocolate chips
Prep:
Preheat oven at 350F (180C). Peel and core apples (pears and peaches too, if you wish). No need to peel plums. Slice fruit into thin wedges. Place in large bowl with cranberries. In a small bowl, stir brown sugar with flour and spices. Sprinkle over fruit and stir to coat. Turn into a 9X13 inch baking dish.
In a bowl, stir flour with baking powder, cinnamon and salt. In a large bowl, using a wooden spoon, beat butter with sugar until well mixed, 2 min.
Beat eggs, then vanilla. Gradually stir in flour mixture, then chocolate chips. Drop heaping tablespoons (22 ml) over fruit without covering completely.
Don’t smooth top. Bake, uncovered, until topping is golden and fruit bubbling, from 1 hour 10 min to 1 hour 15 min. Let stand for 10 min before serving.
